Italia’s Story

Hi, I’m Italia. I was diagnosed with celiac disease at 23, but my story started long before that. Throughout my childhood, stomach pain and intestinal issues were just “normal” for me. I had countless doctor and urgent care visits and was almost always sent home with instructions to follow the BRAT (bland) diet—bananas, rice, apples, and toast—to calm my stomach. As I got older, especially between 16 and 22, holidays like Thanksgiving were rough. I’d load up my plate with macaroni, dressing, pot roast, green beans, and potato salad—then spend the rest of the time feeling sick and confused about why.

For years, I tried to figure it out on my own. I experimented with different diets and even convinced myself I was lactose intolerant because cereal, bagels, milk, and cookies left me bloated and uncomfortable. I relied on over the counter antacids and lactase tablets, but they rarely brought real relief. It was not until I started working at a doctor’s office and finally committed to a full checkup that I got answers. That is when I was diagnosed with celiac disease, and everything started to make sense.

My Motivation

I share gluten free recipes and educational content because I do not want anyone to go through what I did. Celiac disease can be serious, especially for babies and children who may go undiagnosed, and for adults who spend years unknowingly damaging their bodies. There are so many people living with constant discomfort, thinking it is normal. If my story, recipes, and resources can help someone get answers sooner or feel less alone, then this platform has purpose.
